This process is called Bierstacheln in Germany. The hot poker is flash caramelizing the unfermentable complex sugars creating a “beer brûlée” effect, making the beer smoother, sweeter, and creating a caramelized, marshmallow-like foam and malt ball flavor in the beer.
We’ll be outside, so dress appropriately, and enjoy some end of winter fun!
