Antlers Lodge, the signature restaurant at Hyatt Regency Hill Country Resort and Spa, will host a Thanksgiving dining experience for guests and local residents.
The four-course holiday meal will begin with an amuse bouche of foie gras served with compressed kumquat or a winter vegetable tartlet with cured tomato and micro basil. The first course will feature the option of a red pepper sweet pepper bisque with crème fraiche or a baby greens salad with roasted butternut squash with hazelnut crumble and figs.
For the main course, guests have the option of a blackened cobia with fennel beurre blanc, a Shiner-brined smoked pork loin with a peach and sage glaze, garlic and herb roasted prime rib, or a brie apricot turkey roulade and shallot confit turkey thigh served with giblet onion gravy. Each table will receive family-style servings of Havarti whipped potato puree, Hatch chile cornbread dressing, maple-glazed sweet potato, sweet chili crispy brussels sprouts, and bacon chive biscuits.
The meal will conclude with a chai poached pear and pumpkin cream cheese mousse, or a carrot entremets with carrot apricot gel, chocolate crunch, praline cremeux, and candied pecans.
The holiday dining experience will be available on Thanksgiving Day, November 23, between 1 p.m. and 6 p.m. It is $97 for adults, $75 for seniors and a special a la carte menu will be available for children.
