Lincolnshire Marriott Resort, Lake County’s most luxurious resort, concludes its 50th anniversary with the launch of its final pop-up of the year at its signature upscale dining destination, Three Embers Restaurant. This initiative coincides with the 50th anniversary season at its award-winning Marriott Theatre. Each pop-up throughout the year is an extension of the current stage production at the theatre, transporting guests to another realm while enjoying a themed food and beverage menu led by the culinary team at Three Embers Restaurant. The newest experience, Embers Christmas Grille, coincides with the current production at the award-winning Marriott Theatre, Million Dollar Quartet Christmas, running now through January 3, 2026.
Three Embers Restaurant will be reimagined as a festive retro holiday lounge with bold visual nods to rock ‘n’ roll legends. Guests will be greeted by a striking gallery wall featuring framed portraits of iconic performers from Million Dollar Quartet Christmas, set against a sleek backdrop with geometric gold accents. The space glows with warm holiday lights, oversized wreaths, and shimmering garlands, while a dedicated photo area showcases a snowy Christmas tree scene framed by greenery for the perfect seasonal snapshot. The design blends mid-century sophistication with vibrant holiday cheer, creating an immersive setting that feels both nostalgic and celebratory.
Led by Director of Food & Beverage Brent Mulvey and the Three Embers culinary team, the prix fixe menu is a festive feast of bold flavors and nostalgic twists. Guests can kick off their meal with either Carl’s “Run Rudolph Run” Chicken Gumbo, a Southern-inspired starter with grilled chicken and citrus-coconut rice, or Jerry Lee’s “Jingle Bell Rock” Southern Cobb, a vibrant salad with Tasso ham and heirloom tomatoes. Entrée highlights include Elvis’ “Blue Christmas” PB&J Chicken with cheddar grits and pasilla negra sauce, Johnny’s “Santa Claus Is Coming to Town” Grilled Pork Chop with mustard Q and crispy onions, and Presley’s “Silent Night” Polenta-Crusted Catfish with lemon cream. Dessert wraps up with the Peppermint Twist, a peppermint mocha mousse cake with chocolate sauce.
For those who prefer to order off the full dinner “Christmas Menu,” starters include Great Balls of Cauliflower, spiced tempura cauliflower with smoked celery root purée and tomato pesto, Elvis’s PB&J Flatbread, topped with pasilla negra sauce, Nueske’s bacon, bananas, and Toma cheese. Salads like the Southern Cobb and Fever Fennel offer fresh, seasonal flair, while the Blackened Chicken Gumbo brings Southern comfort to the table.
Entrées include showstoppers like the Bleu Suede Filet, an 8oz prime filet with whipped potatoes and bleu cheese butter; You Ain’t Nothin’ But a Pork Chop, featuring a 10oz chop with PB&J sauce and cheesy fingerlings; and the Red Eyed Handsome Scallops, poached in Madeira and served with sweet potato-banana purée and crispy kale. Vegetarian options like the Candied Squash Ravioli and Peace in the Valley Vegan Medley round out the menu with holiday warmth and creativity.
For guests joining on Fridays and Saturdays, the Supper Club Supplement offers additional indulgences like The Pilgrimage, a smoked turkey dinner with sweet potato-banana purée and green bean casserole, and the Endless Prime Rib, served with whipped potatoes and creamy horseradish.
