44 Farms Dinner at Wild Oats
Wild Oats, Underbelly Hospitality’s Texas-inspired, family-friendly restaurant in the Houston Farmers Market, will collaborate with long-time partner 44 Farms, a premier Texas rancher, to host a multicourse dining experience on Wednesday, March 22 at 6:30 PM. Wild Oats’ culinary team and 44 Farms have created a five-course meal that incorporates 44 Farms’ beef with the flavors of the Lone Star State. The menu includes:
First Course: Pan de campo with whipped tallow
Second Course: Medina County Steak Tartare with serrano, shallot, chive, Redneck cheddar and saltines
Third Course: Suadero tamale with slowly roasted brisket, chile rojo and garlic crema
Fourth Course: Smoked beef shin with yucca fries, baked beans and greens
Dessert: Smoked tallow cast iron chocolate chip cookie with milk
