After extensive research of the many sauces & dressings (well over a dozen) and countless tastings of various items, we have created a beautifully simple, yet very intentional, four item tasting menu paired with our Aptos Vineyard wines. Classics like hamachi, maguro & sake are featured and my special sunomono to start. A great thanks goes out to Greyson, Sheon and Britany for accommodating my curiosity with great enthusiasm.
