The evening will begin with an amuse bouche of Muffuletta Deviled Eggs with olive, Dijon, capers, salami, smoked gouda cheese, sesame, and Old Bay paired with a 2022 Blank Stare, a Russian River Valley Sauvignon Blanc, followed by Octopus Carpaccio with salsa verde, fried chickpeas, pickled sea beans, and Calabrian chili oil and a 2021 Mannequin Chardonnay. Next will be Olive Oil Poached Swordfish with pistachio pistou and marinated gigantes beans with a 2022 8 Years in the Dessert, a Zinfandel blend, then roasted Creekstone Beef Tenderloin, Bordeaux demi-glace, pea and rampon cream, and pommes souffle and a 2021 Papillon, a Bordeaux Blend. Dessert, a Chocolate Mousse Tart with raspberry, will be paired with a 2022 Abstract, a Grenache, Petite Sirrah, Syrah blend. Orin Swift Cellars was founded in 1998 and offers a delicious blend and variety of wines including enchanting Zinfandels and Cabernets made with grapes sourced from premium vineyards resulting recently in the release of a Wine Spectator’s Top 100 selection. Lake Chalet is one of Oakland's premier restaurants and is known for their seafood-centric menu prepared using quality, seasonal ingredients.
