The Second ‘Judgement of Paris’
There’s almost an impenetrable quality mystique surrounding Champagne that Californian versions have never quite been able to penetrate. Despite solid efforts, high quality California bubbles struggle to overcome the brute force of French marketing and the ‘sparkling wine’ stigmata they stamped on our foreheads. And then grower-Champagne landed, and Pét Nat just seemed to be where this category found its natural resting place in California. Let the French have this one and move on.
Tom Sherwood is making the case for a new Judgement of Paris with his spectacular sparkling wines at BXT.
Grapes are personally hand farmed from Sonoma Carneros and additional fruit is sourced from other like minded organic growers all over the state of California. 5 of the 7 traditional champenois varieties are utilized in a number of blended cuvees and singular varietal/vineyard expressions are also bottled. BXT is literally a graft of best practices and differentiating assets of the grower movement and our incredibly rich and varied soils and ecosystems. Tom unifies this array through his hands-on, deeply engaged involvement in every vineyard he sources to create profoundly unique wines of stunning quality. All of his grapes are hand picked, gently whole cluster pressed and fermented in new and used French oak. The wine ages for 6-9 months in barrel prior to being bottled with yeast and a sugar source (juice, honey and cane sugar). Secondary fermentation takes place in a bottle and the wine is then left undisturbed until ready. Bottles are then hand-riddled and disgorged. One of the most impressive new-comers to our weekly winemaker events, Tom is not only rivaling top tier Champagne, he’s doing it with a uniquely Californian twist. BXT is small, but it is arguably one of the most impactful and important projects in the state!
