Learn more about Japanese sake, its versatility and non-traditional pairings during Japanese Sake Pairing Nights – an intimate dinner series at Birdsong (1085 Mission St) on Thursday, 10/24 and Friday, 10/25.
The multi-course pairing menu, led by Birdsong’s chef Christopher Bleidorn and Beverage Director Alex Silverman, will spotlight the many delicious and creative ways that Japanese sake can be paired with non-Japanese dishes, with a focus on seafood. Highlighted courses include:
Halibut (salt-cured served with marinated seaweeds from Mendocino) with Toko "Divine Droplets" Junmai Daiginjo, Yamagata
Geoduck (lightly poached with Persian and serpent cucumbers) with Masumi Shiro 'Sake Matinee' Junmai Ginjo, Nagano
Santa Barbara Spot Prawn (grilled corn, corn puree and okra) with Taiheizan 'Tenko 40' Heavenly Grace, Akita
Abalone (grilled artichokes and veal sweetbreads) with Dewazakura 'Mountain Cherry' Daiginjo, Yamagata
Raspberries, Mt. Tam Ice Cream and Summer Stone Fruit with Kamoizumi "Summer Snow" Nigori Ginjo, Hiroshima
Through the immersive dinner series, guests will also gain a deeper understanding and appreciation for Japanese sake as certified sake sommelier Eduardo Dingler showcases the beautiful complexity and versatility of the beverage.
The dinner series is part of the Japan Food Product Overseas Promotion Center (“JFOODO”)’s latest campaign – Discover New Harmonies with Japanese sake – where the organization is partnering with world renowned restaurants to foster a deeper appreciation for Japanese sake and non-traditional pairings.
