The evening begins with a Champagne reception featuring chef's choice canapés and ONE65 Champagne, setting the stage for a journey through some of Corison's most iconic vintages and vineyard-designate Cabernet Sauvignons.
Indulge in exquisite courses including Tuna Sashimi Tartare with watermelon radish, citrus, and Campari, paired with the vibrant 2024 Corazón Wirz Vineyard Riesling; Lobster Caroline roasted with five spice and sauce verjus alongside both the 2021 and 2019 Napa Valley Cabernet Sauvignons; and a luxurious Steak Trio featuring Dry-Aged New York Strip, Imperial Ribeye, and Australian F1 Wagyu Filet Mignon paired with the distinguished 2016 and 2013 Napa Valley Cabernet Sauvignons. The experience continues with a curated fromage course showcasing artisanal domestic cheeses, complemented by the exceptional 2014 Sunbasket Vineyard Cabernet Sauvignon and 2014 Kronos Vineyard Cabernet Sauvignon, before concluding with an assortment of handcrafted mignardises and fine chocolates.
