Chef Sangtae and Kate Park’s Korean culture is the foundation of Bonyeon, Chicago’s first steak omakase concept. This AAPI Heritage Month, they’ll be teaming up with the acclaimed Chef Jennifer Kim of Proxi Coastal Asian for a unique collaboration dinner celebrating their shared Korean roots.
On Thursday, March 22, the Eater Chicago 2018 Chef of the Year will bring their bold, vibrant flavors from Proxi’s newly launched coastal Asian menu to the chef’s counter. Guests can expect nine courses of dishes like a beef tartare Korean pancake with kimchi and quail yolk, grilled rice cakes with fish sauce caramel, A5 sirloin with apricot ssamjang and pickled fiddleheads, and dry-aged halibut jjigae with smoked kanpachi stock and spring peas.
