Taste America, presented by Capital One, is a nationwide initiative that brings together chefs, special guests, and diners from across the country to celebrate the local independent restaurants at the heart of our communities. Through Taste America, the James Beard Foundation has brought together some of the nation’s finest chefs and changemakers who will come together in 20 markets across the United States to represent a shared mission of “Good Food for Good'.' Each market with its featured chefs will showcase the centrality of American food culture and celebrate diverse communities, leading the way to a future culinary industry where all can thrive.
Chicago’s event, which will be at Bloom Plant Based Kitchen (1559 North Milwaukee Avenue), will be an intimate gathering with a multi-course menu created by TasteTwenty host chef Rodolfo Cuadros of Bloom Plant Based Kitchen in Chicago, IL and TasteTwenty guest chef Jennifer Dobbertin of Best Quality Daughter in San Antonio, TX. The menu will reflect their signature styles and highlight the uniqueness of their restaurants and communities. The dinner will also include beverage pairings for each course. Full menu includes:
APPETIZER | Roasted Kabocha Squash with Curry Cashew Crema, Herbs, and Crispy Rice
ENTRÉE | Braised Jackfruit with Potato Gratin, Forest Mushroom Demi-Glace, and Chicory Greens
DESSERT | Meyer Lemon Baked Alaska with Meyer Lemon Shortbread, Vanilla–Parsnip Ice Cream, Toasted Meringue, Berry Ceviche, and Toasted Hazelnuts
