Sunday Supper at L'Ostrica: Trattoria
This week, we're sharing some of the things that Eric remembers fondly from his time working at an Italian Trattoria in the little town of Canonica, Umbria.
MUSHROOM TOAST - Roasted local mushrooms. Sautéed local greens. Ricotta salata. Toasted house focaccia.
RADICCHIO CAESAR SALAD - Torn radicchio. Lolo Caesar dressing. Parmesan. Garlic croutons.
TORTELLINI IN BRODO - Veal tortellini. Rich chicken broth.
GRILLIO MISTO - Shared for the table: Eric’s sweet Italian sausage. Grilled lamb chops with garlic-rosemary rub. Italian roast chicken with lemon, olive, garlic and herbs. Served with: Roast cauliflower with Parmesan, chili flake, olives, and olive oil.
PAN DI SPAGNA W. PERSIMMON - Italian sponge cake. Crema diplomatica. Persimmon compote.
