Eggstravagant Easter Brunch at Hyatt Regency Coconut Point


The holiday brunch will take place on Sunday, April 20 between 10:30 a.m. and 2:30 p.m. Menu highlights include a made-to-order omelet station, a pancake bar with berry compote and whipped butter, and a selection of house-made pastries created by the resort’s pastry team. Guests can also enjoy an extensive salad buffet featuring produce from local farms, assorted crudites, and a variety of cured meats and cheeses. A fresh seafood station will feature smoked salmon, trout, peppered mackerel, fresh jumbo shrimp, oysters, and an assortment of sushi and sashimi. Entree selections include slow-roasted peppered prime rib, Easter ham, and a roasted leg of lamb. Additional main dishes include chicken breast with a wild mushroom demi-glace, pan-seared cobia with coconut curry sauce, and a potato station serving a vegetable hash or roasted fingerling potatoes with raclette cheese. For dessert, guests can indulge in more than a dozen house-made items ranging from strawberry cream puffs and carrot cake to praline chocolate mousse tarts and s’mores bars, as well as an ice cream sundae station with a variety of sauces and toppings. The holiday meal is $110 for adults, $55 for children between five and 12, and kids four and younger dine free. Each adult guest will also receive a complimentary mimosa upon arrival.
